Our Apple Cider is the result of a long-standing tradition that combines the expertise of the Ricci Curbastro family in Franciacorta with a passion for cultivating ancient French apple varieties in Rontana, Romagna. This cider is a drink that celebrates the simplicity and authenticity of the fruit, expressing the quality of our land and the craftsmanship behind its production.

Production

  • Apple Varieties: The apples used come from ancient French varieties carefully grown in our orchard in Romagna at an altitude of 400 meters above sea level. The four Norman-origin varieties—Douce Moën, Marie Menard, Perit Jaune, and St. Martin—are not typical table apples but resemble wild apples: less sweet, rich in tannins, and with good acidity.
  • Production Process: hand-harvested, selecting only the finest apples. Washed, crushed, and pressed using an old wooden press to extract the juice.
  • Fermentation: the juice undergoes natural clarification and is then fermented at a controlled temperature in stainless steel tanks, reaching an alcohol content of about 8% vol.
  • Aging & Secondary Fermentation: after several months in the cellar, the cider is bottled with the addition of yeasts (Saccharomyces cerevisiae) and sugar for a natural second fermentation in the bottle, which also develops its fine bubbles. It is aged on the lees for 12-18 months before undergoing disgorgement, during which the yeast sediment is removed and a Dry dosage syrup (approx. 30 g/l) is added.

Tasting Notes

  • Colour: Golden yellow, clear and bright, reflecting the freshness of the apples used.
  • Aroma: Fresh and fruity, with distinct notes of apple, citrus, and delicate floral hints, creating a rich and refined bouquet.
  • Taste: Crisp, sparkling, and slightly sweet, with a pleasant acidity that balances its softness. The clean and persistent aftertaste leaves a fresh apple finish.

Serving Temperature

  • Serve well chilled, between 6-8°C, to enhance its freshness and fruity notes.

Food Pairings

Apple cider pairs perfectly with light dishes such as salads, fresh cheeses, grilled fish, and chicken-based meals. It is ideal as an aperitif, complementing appetizers and finger foods, and can also be used in cocktails. It pairs wonderfully with yeasted desserts as well.
