Sangiovese

Romagna Sangiovese DOC Brisighella

100% Sangiovese from estate-owned vineyards in the municipality of Brisighella (Ravenna).

Planting density: Between 3,500 and 4,000 vines per hectare.

Altitude: 400-450 meters above sea level.

Soils: Marl-sandstone soils with a silt-sandy texture and clay content. Excellent drainage, enhanced by the natural slope, and rich in minerals, which contribute to the wine’s structure and freshness. The vineyard rows are grassed to preserve biodiversity and improve the organic content of the soil.

Production: Maximum of 9 tons per hectare, with a 65% yield.

Production cycle: Hand-harvested in September. The grapes undergo gentle destemming and cold maceration before fermentation, then are racked off immediately after fermentation. Aged in steel and concrete tanks for at least one year after harvest.

Colour: Ruby red with garnet reflections, clear, and of medium consistency.

Aroma: Intense and moderately complex, with fruity notes of cherries and redcurrants, hints of dried flowers, and a mineral finish.

Taste: Displays a fresh and tannic character that prevails over the structure. Well-balanced, with a dry and medium-persistent finish.

Alcohol content: 12.5% vol.

Bottle storage: Lay bottles down in a cool, dark place.

Serving temperature: Serve at 16°C, opening the bottle just before serving.

Food Pairing: ideal with pasta dishes, red meats, cured meats, and fresh cheeses.

Col Mora

Romagna Sangiovese DOC Brisighella

100% Sangiovese, produced from a selection of grapes from our highest vineyard (430-450 meters above sea level) among the estate-owned vineyards in the municipality of Brisighella (Ravenna).

Planting density: 3,500 vines per hectare, planted in 2007.

Altitude: 430-450 meters above sea level.

Soils: Marl-sandstone soils with a silt-sandy texture and clay content. Excellent drainage, enhanced by the natural slope, and rich in minerals, which contribute to the wine’s structure and freshness. The vineyard rows are grassed to preserve biodiversity and improve the organic content of the soil.

Taste: Well-balanced between tannins and structure, with complexity and a fruity aftertaste of ripe cherry and blackcurrant.

Alcohol content: 12.5-13% vol.

Food Pairing: perfect with lasagna, pasta with ragù, and all pasta dishes. Excellent with both white and red meats.

Zinëstra

IGT Ravenna Sauvignon Blanc

100% Sauvignon Blanc, a refined and distinctive expression of the hilly territory of Brisighella (Ravenna). Its name, Zinëstra, is inspired by the broom flowers (ginestre) that turn the steep slopes surrounding our vineyards a vibrant yellow in late spring.

Planting density: 4,000 vines per hectare, planted in 2020.

Altitude: 400-450 meters above sea level.

Soils: Marl-sandstone soils with a silt-sandy texture and clay content. Excellent drainage, enhanced by the natural slope, and rich in minerals, which contribute to the wine’s structure and freshness. The vineyard rows are grassed to preserve biodiversity and improve the organic content of the soil.

Production Cycle: hand-harvested in September. The carefully selected grapes undergo a short maceration on the skins before gentle pressing. Fermentation takes place in temperature-controlled stainless-steel tanks to preserve the varietal aromas. The wine is aged for 6 months in oak barrels, followed by bottle aging.

Colour: Bright straw yellow with golden reflections.

Aroma: Intense and enveloping, with notes of white flowers, citrus fruits, exotic fruit, and subtle herbal nuances.

Taste: Fresh and savory, with a perfect balance between acidity and softness. Structured and harmonious, the finish is long and mineral, with pleasant fruity hints.

Alcohol content: 13% vol.

Bottle storage: Lay bottles down in a cool, dark place.

Serving temperature: Serve at 10-12°C. It is recommended to open the bottle a few minutes before serving to enhance the wine’s aromatic expression.

Food Pairing: ideal with refined seafood dishes, shellfish, white meats, vegetable risottos, and fresh cheeses.

Colle Torre Monte

Colli di Faenza DOC Rosso Riserva

A prestigious Riserva wine, crafted from a meticulous selection of the finest grapes from our estate-owned vineyards in Brisighella (Ravenna).

Grape Composition: 40% Sangiovese, 40% Cabernet Sauvignon and 20% Merlot

Planting density: 3,500 vines per hectare, planted in 2007.

Altitude: 400-450 meters above sea level.

Soils: Marl-sandstone soils with a silt-sandy texture and clay content. Excellent drainage, enhanced by the natural slope, and rich in minerals, which contribute to the wine’s structure and freshness. The vineyard rows are grassed to preserve biodiversity and improve the organic content of the soil.

Production Cycle: hand-harvested in September. The carefully destemmed grapes undergo a cold maceration before fermentation. The wine matures for 20 months in 225-liter oak barrels, followed by 12 months of bottle aging.

Colour: Evolved and clear garnet red.

Aroma: A refined evolution of scents, with ethereal notes, sweet spices, stewed fruit, dried herbs, and flowers, leading to a distinct mineral finish.

Taste: Warm and smooth, well-balanced with extremely fine tannins, full-bodied, round, and enveloping.

Alcohol content: 13% vol.
